our sourdough is a staple for us, its almost religious to our baker, a bread that we believe. 

made over 3 days, using organic flours from japan, canada, US and UK, leavened by natural yeast (we call it starter) that we been feeding 3 times a day since 3 years ago, hand shaped and baked on stone at 275c degree.
